How to make Brigadeiro
Brazil, from the presidential campaign of 1945

Soft chocolate truffles made of condensed milk, butter and cocoa, rolled in chocolate sprinkles. No Brazilian birthday party is complete without them.
Ingredients
- 1 tin (395 g) sweetened condensed milk
- 1 tablespoon butter, plus a little for your hands
- 2 tablespoons cocoa powder
- Chocolate sprinkles, to coat
- Small paper cases (optional)
Method
- Put the condensed milk, butter and cocoa in a non-stick pan over a low heat.
- Stir all the time with a wooden spoon or spatula for 10 to 15 minutes, until the mixture is thick and slides away from the bottom of the pan in one piece when you tilt it.
- Tip it onto a buttered plate and leave until cool enough to handle, about 20 minutes.
- With buttered hands, roll small balls about 2 cm across and roll them in the sprinkles. Put them in paper cases and serve.

They are named after Brigadier Eduardo Gomes, an air force officer who ran for president in 1945. They were first made by Heloísa Nabuco de Oliveira in Rio de Janeiro and sold to raise money for his campaign. He lost, but the sweet stayed.
