How to make Kachumbari

A fresh, uncooked salad of chopped tomatoes, onions and chilli, with lemon or lime juice, coriander and salt. It is served with nyama choma, pilau and ugali to add freshness.

Serves 4 15 min

Ingredients

  • 4 ripe tomatoes, finely chopped
  • 1 red onion, very thinly sliced
  • 1 small green chilli, finely chopped (optional)
  • A handful of fresh coriander, chopped
  • Juice of 1 lemon or lime
  • Salt

Method

  1. Soak the sliced onion in cold salted water for 5 minutes to soften its taste, then drain.
  2. Mix the tomatoes, onion, chilli and coriander in a bowl.
  3. Add the lemon juice and salt just before serving and toss gently.

The Swahili word kachumbari comes from the Indian word cachumber, the name of a similar salad.
