How to make Rice and beans

All of Tanzania; on the coast the beans are often cooked in coconut milk

A plate of plain or coconut rice topped with a stew of red kidney beans, one of the most common everyday meals in homes and small restaurants across the country.
Ingredients
- 2 x 400 g tins red kidney beans, drained
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 clove garlic, crushed, and 1 teaspoon curry powder (optional)
- 200 ml coconut milk
- Salt, and cooked rice to serve
Method
- Heat the oil in a pan and fry the onion for 5 minutes until soft.
- Add the garlic, curry powder and tomatoes and cook for 5 minutes until the tomatoes break down.
- Add the beans and 100 ml water, stir and simmer for 5 minutes.
- Pour in the coconut milk, add salt and simmer gently for 10 minutes until creamy, stirring now and then.
- Serve spooned over hot rice.
