How to make Frittatensuppe

Clear beef broth with thin strips of pancake, sprinkled with chives. It is one of the most common soups to start a traditional Austrian meal.

Serves 4 30 min

Ingredients

  • 100 g plain flour
  • 200 ml milk
  • 1 egg
  • A pinch of salt
  • A little butter, for frying
  • 1 litre good beef broth
  • Chopped chives

Method

  1. Whisk the flour, milk, egg and salt into a smooth, thin batter and leave it to rest for 10 minutes.
  2. Heat a little butter in a frying pan and pour in just enough batter to cover the base thinly.
  3. Cook for about 1 minute on each side, until lightly golden and set. Repeat with the rest of the batter.
  4. Let the pancakes cool a little, roll them up and slice them into thin strips.
  5. Bring the broth to the boil. Put the pancake strips into soup bowls, pour the hot broth over them and sprinkle with chives.
