How to make Ratatouille
Nice, Provence

A slow-cooked stew of summer vegetables: aubergine, courgette, peppers, onion and tomatoes, with garlic, olive oil and Provençal herbs.
Ingredients
- 1 large aubergine, cut into cubes
- 2 courgettes, sliced
- 2 peppers (red and yellow), cut into strips
- 1 onion, sliced
- 4 ripe tomatoes, chopped
- 3 garlic cloves, chopped
- 5 tablespoons olive oil
- A few sprigs of thyme, a bay leaf and some basil
- Salt and pepper
Method
- Fry the aubergine in some of the olive oil until soft and lightly browned, then set it aside.
- Do the same with the courgettes, then with the peppers.
- In a large pot, soften the onion in the rest of the oil, then add the garlic and the tomatoes.
- Put all the vegetables back in the pot with the thyme and bay leaf, and season with salt and pepper.
- Cover and simmer gently for about 30 minutes, stirring now and then.
- Add torn basil before serving, warm or at room temperature.
