How to make Tzatziki

A cool dip of strained yogurt, grated cucumber, garlic, olive oil and a little vinegar or lemon, often with dill or mint. It is served as a meze and as a sauce for souvlaki and gyros.

Serves 6 1 h 15 min

Ingredients

  • 500 g thick strained Greek yogurt
  • 1 cucumber
  • 2 garlic cloves, crushed
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon chopped dill or mint
  • Salt

Method

  1. Grate the cucumber, sprinkle it with a pinch of salt and leave it for 10 minutes.
  2. Squeeze the cucumber hard in your hands or in a clean cloth to remove as much water as possible.
  3. Mix the yogurt with the cucumber, garlic, olive oil, vinegar and herbs. Season with salt.
  4. Chill for at least an hour so the garlic flavour spreads, then drizzle with a little more olive oil to serve.
