How to make Chiya

Sweet milk tea, boiled together with black tea and often spiced with ginger or cardamom. It is served at every roadside stall and trekking lodge, in small glasses.

Serves 2 10 min

Ingredients

  • 250 ml water
  • 250 ml milk
  • 2 teaspoons black tea leaves
  • 2 to 3 teaspoons sugar
  • 2 cardamom pods, crushed, and a thin slice of ginger

Method

  1. Bring the water to the boil with the cardamom and ginger and let it bubble for a minute.
  2. Add the tea leaves and simmer for one minute.
  3. Pour in the milk and sugar and bring it back to the boil, watching that it does not boil over.
  4. Strain into small glasses or cups and serve hot.
