How to make Turli tava

A mixed vegetable bake of potatoes, aubergine, okra, green beans, peppers and tomatoes, with or without meat, slowly cooked in a clay dish called a tava.

Serves 4 2 h

Ingredients

  • Optional: 500 g beef, lamb or pork, cut into cubes
  • 3 potatoes, peeled and cut in chunks
  • 1 aubergine and 1 courgette, cut in chunks
  • 200 g okra or green beans
  • 2 peppers, 2 carrots and 1 onion, all sliced
  • 3 tomatoes, chopped, and 2 garlic cloves
  • 5 tablespoons sunflower oil, 1 teaspoon paprika, salt and pepper

Method

  1. Heat the oven to 180°C. If you use meat, brown it in a little oil in a pan first.
  2. Put the meat and all the vegetables in a large earthenware or ovenproof dish. Add the oil, paprika, salt and pepper and toss well.
  3. Pour in about 250 ml of hot water, cover with a lid or foil and bake for about 1 hour.
  4. Uncover, stir gently and bake for another 30 to 40 minutes, until the vegetables are soft and lightly browned. Serve with bread.

The name comes from the Turkish word for "variety", and similar dishes are cooked in Turkey, Greece and Albania.
