How to make Ayran
Ayran
All of Türkiye, and among Turkic peoples for about a thousand years

A cold, salty drink of yoghurt whisked with water, sometimes frothy on top. It goes with kebabs, lahmacun and pide, and is especially refreshing in summer.
Ingredients
- 250 g plain whole-milk yoghurt
- 250 ml cold water
- ½ teaspoon salt
- Ice cubes and a few mint leaves (optional)
Method
- Put the yoghurt, water and salt in a jug.
- Whisk hard, or blend for 30 seconds, until smooth and frothy on top.
- Taste and add a little more water if you like it thinner.
- Pour into glasses over ice and serve with mint, if you like, alongside grilled meat or pastries.
