Leafy greens cooked with onion, tomato and peanut butter, which melts into a creamy, nutty sauce. Spinach, rape, covo or pumpkin leaves are all used. It is one of the most common relishes for sadza, and a good way to make a meal of vegetables alone.

Serves 4 15 min

Ingredients

  • A large bunch of spinach or other leafy greens
  • 1 small onion, chopped
  • 2 tomatoes, chopped
  • 3 tablespoons smooth peanut butter
  • 3 tablespoons oil
  • About 50 ml water
  • Salt

Method

  1. Wash the greens and cut them into fine strips.
  2. Heat the oil in a pot, add the greens and a pinch of salt, then the onion, and fry for about 2 minutes.
  3. Add the tomatoes and cook for 2 more minutes.
  4. Stir in the peanut butter with a little water until the sauce is smooth. Cover and simmer on a very low heat for 3 to 5 minutes. Serve with sadza.
